Made fresh every day
Every pasta on the menu is made in house, fresh every day, upstairs on Level 2. Four on right now, from pici with pecorino and black pepper to tagliatelle with a Tuscan ragù of free farmed pork. And if you can’t pick one, you don’t have to.
Pici, thick and chewy, done cacio e pepe with pecorino romano and black pepper. Cavatelli with clams, chives and a little ’nduja heat. Ricotta gnocchi with gorgonzola crema, mushrooms, brussel sprouts and walnuts. And tagliatelle with the ragù, finished with parmigiano.

02 · The kitchen
Watch it happen
The extruder sits in the open kitchen, so the pasta is made in view: dough in one end, pasta out the other, into the pan and onto the pass. No back room, no mystery. Sit where you can see it all, or sit back with a glass and let the room do the work. Level 2 is built around it, with a long table for the bigger nights. More on the restaurant.
03 · How to do it
Spritz first. Pasta second.
Start downstairs on Level 1 with a spritz or a Negroni at the bar, then come up for dinner, and back down for a nightcap if the night allows. Can’t decide? Trust Franco: the kitchen sends out a run of dishes to share, five courses or seven, and nobody at the table has to choose a thing.
